In an interview (I sadly cannot remember which one) Sean said "I wrote that....in a tour bus...Richey wanted me to teach him how to play Smells like Teen Spirit"
Is it so? Did he write the whole music to that, incl. the vocal line?

No....I remember that vaguely too but I think it was a reference to trying to teach Richey how to play a few songs on geetar around that time and they didnt get very far with nirvana....the song was a Nicky and James affair

Sean wrote some of the music to it but I can't remember if that includes the riff. Other songs he has been confirmed to have had a big hand in writing the music for are : You Love Us, The Second Great Depression and Let's Go To War.

No Surface is very much Smashing Pumpkins inspired than Nirvana, to the extent that in the demo version James introduces himself as "Hello I'm Billy Corgan!" Maybe Removables is what the quote refers to?
